For using inktboek itself, yes — you can use it freely without a KvK. To receive iDEAL deposits via Stripe you need a KvK, because Stripe requires a valid business registration. If you have no KvK yet, sort that first and connect your Stripe account afterwards.
Yes. At signup you import a CSV with your customers (name, email, phone, notes). Existing projects you can create manually for the customers you are still actively working with.

Deposits are refundable on timely cancellation. The window you set yourself. You start the refund button in inktboek; the actual refund runs through Stripe. On no-show or late cancellation the deposit stays.
